Sweet and sour fish

INGREDIENTS

1 pound of red snapper (‘bourzwa”)

1 tablespoon of soya sauce

1 tablespoon of all-purpose flour

2 cups of oil for deep frying

1 green bell pepper, diced

1onion, diced

1(8 ounce) of canned pineapple chunks (Juice served)

1 and1/2 tablespoons of white sugar

Salt to give taste

3 tablespoons of ketchup

1 tablespoon of water

1 teaspoon of sesame oil

2 teaspoons of all purpose flour

 

METHOD (FRYING)

 

 

Step One

•           Cut  fish (red snapper)into bite-size pieces

•           Place in a mixing bowl and combine it with soy sauce and one(1) tablespoon of flour

•           Let it stand for 30 minutes

•           Meanwhile, heat the oil in a deep fryer or heavy saucepan to 375 F (190?)

Step Two

•           Deep fry red snapper pieces until golden brown

•           Drain on paper towels and set aside

 

Step Three

•           Sauce:   sautéed green pepper, onion and pineapple in a medium skillet for one(1) minute

•           Stir in reserved pineapple juice, sugar ,ketchup, water,,

remaining 2 teaspoons of flour, sesame oil and salt to taste

•           Cook until thickened, stirring occasionally

 

Step Three

Serve by dipping fried red snapper pieces into sauce or pour the sauce over the fish
